ABSTRAK
Telah dilakukan penelitian tentang uji mikrobiologis dan analisa protein pada sarden kaleng. Sampel yang digunakan sebanyak dua kaleng dengan kode A dan B dengan pemeriksaan tiga kali pengulangan. Dari hasil penelitian terdapat angka lempeng total berkisar antara <30-6340 koloni/ml, semua sampel tercemar oleh Coliform dengan nilai MPN 2 - 8,8/100 ml. E. coli dan C. perfringens tidak ditemukan pada sampel A maupun sampel B.
Kadar protein yang di analisa dari sampel dengan menggunakan metoda tabung Kjeldahl didapat hasil sampel kode A 21.34 % dan kode B 20.02%. Kadar ini memenuhi kadar protein pada ikan sarden yang telah ditentukan Departemen Kesehatan yaitu 21.1%.
ABSTRACT
It has been conducted a research about the microbiology experiment and protein analysis to canned sardine. Sample which used is 2 cans sample with A and B code with three times experiment repeating. From the research result, it is obtained total plate amount about between < 30-6340 koloni/ml, all of the samples is infected by Coliform with MPN score 2-8,8/100 ml. E. Coli and C. perfringens isn't found both in A sample and B sample.
Protein content which is analized from the sample by using Kjeldhal tube method, gained sample result A code is 21.34% and B code is 20.02%. these contents fulfill the protein content in sardine which was determined by Healthy Department that is 21.1%.
